Rome is the baker's buddy. It has smooth, blazingly bright red skin with sweet, slightly juicy flesh.
Usage: Rome is primarily a cooking apple - its flavor grows richer when baked or sautéed.
Why do Romes and other red apples have red juice or fesh? You might wonder why sometimes, red apples such as Romes will have red juice when cut, or streaks of red color through out the flesh and into the core. This natural process is caused by anthocyanins, the natural plant compounds responsible for red and blue colors in fruits. As well as giving apples their rosy red hue, anythocyanins are also antioxidants with healthy properties. Apple color is dependent on light - apples grown in heavy shade are paler than those that are grown with plenty of sunshine. The more an apple "bleeds", the more antioxidants are in the apple, so enjoy the red, knowing that it is a natural and healthy compound that makes apples very healthy!
